How to make this WW-friendly sloppy joe casserole

Step 1: Preheat the oven to 375°F (190°C).

Step 2: Spray a large skillet with non-stick cooking spray and add the ground turkey. Cook over medium heat, breaking the meat into small pieces, until it’s nearly cooked through.

Step 3: Add the chopped onion, celery and green pepper to the skillet. Continue to cook until the vegetables are tender.

Step 4: Stir in the chili powder, salt, black pepper and a pinch of cayenne. Mix thoroughly so the spices coat the meat and vegetables.

Step 5: Reduce the heat, then add the crushed tomatoes, sugar-free ketchup and Dijon mustard. Stir and simmer until the tomato liquid reduces and the mixture thickens, about 10–15 minutes.

Step 6: Remove the skillet from the heat. Stir in the frozen corn, dried basil and shredded fat-free mozzarella. Transfer the mixture to a rectangular baking dish sprayed with non-stick spray.

Step 7: Prepare the biscuit topping by combining plain no-fat Greek yogurt and self-rising flour in a bowl. The dough will be sticky—turn it out onto a generously floured surface, roll or press it to about 1/4″ thickness, and cut into 8 equal pieces. Place the pieces on top of the meat mixture. Brush with beaten egg and sprinkle with Everything seasoning.

Step 8: Bake in the preheated oven for 20–25 minutes, or until the biscuit topping is lightly browned. Remove from oven and let sit a few minutes before serving.

Tips for preparing this sloppy joe casserole

  • Use a large skillet so the turkey and vegetables cook evenly and you can break the meat into small pieces easily.
  • Dice the vegetables fairly small so they meld into the filling and cook quickly.
  • Because the dough is sticky, flour the work surface and your rolling pin liberally to make shaping and cutting the biscuits easier.
  • Rather than using a biscuit cutter, I find it easier to simply cut the dough into eight equal pieces for even baking.
  • The baking dish I used measures about 10 x 12 x 2 inches. If you bake in individual dishes, watch the biscuit tops so they don’t overbrown.
  • Leftovers reheat well in the microwave. To avoid a chewy topping, remove the biscuits before reheating and add them back afterward if possible.

  • 28 oz crushed tomatoes
  • 1/4 cup sugar-free ketchup
  • 1 tbsp Dijon mustard
  • 2 tsp dried basil
  • 1 cup frozen corn kernels
  • 2/3 cup fat-free shredded mozzarella cheese
  • 1 cup no-fat plain Greek yogurt
  • 1 cup self-rising flour
  • 1 egg, beaten (for egg wash)
  • 2 tsp Everything seasoning

Instructions

  1. Preheat oven to 375°F. Spray a large skillet with non-stick spray.
  2. Add ground turkey and cook until nearly done, breaking into small pieces as it cooks.
  3. Add chopped onion, celery and green pepper; cook until softened.
  4. Stir in chili powder, salt, black pepper and cayenne; mix well.
  5. Reduce heat, add crushed tomatoes, sugar-free ketchup and Dijon mustard. Simmer 10–15 minutes until slightly reduced.
  6. Remove from heat and stir in corn, mozzarella and basil. Transfer to a prepared baking dish.
  7. Make biscuit dough by mixing Greek yogurt and self-rising flour. Turn onto a floured surface, roll to 1/4″ thickness and cut into 8 pieces. Place on top of the casserole, brush with beaten egg and sprinkle with Everything seasoning.
  8. Bake 20–25 minutes or until biscuit topping is lightly browned. Let rest a few minutes before serving.
