Meltaway Pecan Balls

Ingredients

  • 1 cup pecans
  • 1 1/2 cups confectioners’ sugar, divided
  • 1 cup butter (no substitutions), softened
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour

Instructions

  1. Preheat the oven to 325°F (165°C).
  2. Place the pecans and 1/4 cup of the confectioners’ sugar in a food processor fitted with the knife blade. Pulse until the pecans are very finely ground.
  3. Add the softened butter and vanilla extract to the ground pecans. Process until the mixture is smooth, pausing occasionally to scrape down the sides with a rubber spatula.
  4. Add the all-purpose flour and process just until the dough comes together and is evenly mixed.

  8. Transfer the cookies to a wire rack and let them cool for 3 minutes. While still warm, roll each cookie in the remaining confectioners’ sugar and return them to the rack to cool completely.
  9. When the cookies are fully cool, roll them in confectioners’ sugar once more for a snowy, meltaway finish. Repeat with remaining dough and sugar.
