My husband and I began a healthier approach to food in January 2020, following the Weight Watchers Purple plan. Along the way we focused on whole, nourishing foods and portion control, and we’ve seen real results: together we’ve lost significant weight and continue to embrace this sustainable way of eating.

Giving up certain indulgences can be hard — I personally cut back on sugar and have felt much better for it — but that doesn’t mean giving up favorites. I adapt classic recipes into lower-calorie, lower-fat, and lower-carb versions that retain flavor and texture. Below is a straightforward, nourishing chicken pot pie that uses lean chicken, plenty of vegetables, and a light biscuit topping.

This recipe is a favorite year-round. The filling is surprisingly creamy yet light, thanks to a modest amount of fat-free half-and-half combined with chicken broth and a butter substitute. The biscuit topping is made with reduced-fat baking mix so you get that comforting crust without excess calories. The result is a wholesome meal your family will enjoy.
If you already keep a classic chicken pot pie in rotation, this lighter version is worth a try. It’s easy to prepare, excellent for company, and ideal for weeknight or weekend dinners.

TIPS TO MAKE THE PREP EVEN EASIER:
- Substitute rotisserie or leftover cooked chicken for the two chicken breasts to save time.
- Frozen vegetables work well for flavor, color, and texture; canned vegetables can be used if you prefer.
- If you don’t have chicken broth, dissolve 1 teaspoon of chicken bouillon in 2 cups of water as an alternative.
- The filling can be made a day ahead and refrigerated. Make the biscuit topping just before baking. Let the chilled filling sit about 15 minutes at room temperature before baking so the oven time isn’t significantly extended.
HOW TO MAKE HEALTHY CHICKEN POT PIE
Below are the basic steps; see the ingredient list and full instructions in the recipe card that follows.
Step 1: Preheat the oven to 400°F.
Step 2: Place two boneless, skinless chicken breasts in a medium saucepan, cover with water, and bring to a boil. Cook until no pink remains, then drain and let cool briefly.
Step 3: Coarsely chop the cooked chicken into bite-sized pieces. You don’t need uniform pieces — rustic chunks are fine.

Step 4: Prepare the filling in a large skillet. Melt a butter substitute over medium heat, then gradually stir in all-purpose flour until smooth and lump-free. Cook briefly, then whisk in chicken broth and bring to a boil. Reduce heat and simmer for about a minute. Stir in the chopped chicken, peas, carrots, 1/4 cup fat-free half-and-half, thyme, salt, and pepper. Transfer the filling to a greased 9″ pie dish or a 9″ x 9″ baking dish.

Step 5: Make the topping by stirring together reduced-fat pancake and baking mix, 1/3 cup fat-free half-and-half, and dried chives. The dough will be stiff. Drop eight heaping tablespoonfuls over the filling to form biscuits. A cookie scoop helps create even portions.

Step 6: Bake for about 18–20 minutes, until the filling is bubbling and the biscuits are golden brown. Let rest a few minutes before serving.
